When asparagus are in season, I love to eat them in many different ways. This is a yummy salad perfect for lunch or a nice side dish with dinner!

Instructions
  1. Snap the ends of each medium-thick asparagus. In a large saucepan, bring water to a boil. Season with 1 tbsp of coarse salt, add asparagus; boil until tender, 3 to 4 minutes.
  2. In the mean time, in a bowl or mason jar, mix the olive oil, vinegar and S & P to create your dressing
  3. Slice asparagus in 1\2 length wise and add to large bowl. Slice tomatoes, red onion and feta cheese, add to the bowl.
  4. Pour dressing on top and mix well. Add basil on top and serve!
