Instructions
  1. Preheat oven to 350. Spray 9x9 inch baking pan with nonstick cooking spray.
  2. Make oat flour: Place oatmeal into food processor and blend until oatmeal resembles flour.
  3. Measure out just 2 1/2 cups of the oat flour and place in a medium bowl. Whisk in baking powder, salt and spices; set aside.
  4. In a separate large bowl, whisk together pumpkin, sugar, vanilla extract, oil, and applesauce for 1-2 minutes until the consistency is smooth and creamy.
  5. Add in oat flour mixture and mix until just combined.
  6. Gently fold in almost all of the chocolate chips. Pour batter into prepared pan and sprinkle remaining chocolate chips on top.
  7. Bake for 20-25 minutes or until toothpick comes out clean or with just a few crumbs attached. Timing will depend on what size pan you use. Once finished baking, cool 10 minutes on wire rack. Cut into squares.
