Miso is so good for you. I love putting this quick soup together for a healthy lunch!
Quick Miso Soup
Heat the sesame oil in a large, non-stick soup pot. Add the diced onion, garlic and ginger- cook for one minute.
Add the broth, grated carrots and mushroom. Cover and simmer for 5 minutes, or until mushrooms are tender. Add the edamame and cook for 3-4 mins.
Add the noodles and the bok choy, cover, and cook until noodles are tender, about 4 minutes.
Stir or whisk the miso paste to the pot and heat through but do not boil. Taste and add more miso as needed.
