Breakfast Egg Muffin
Feel free to use your imagination for the toppings.
Asparagus and feta cheese
Bacon and chives
Jalapeno & cilantro
Spray Pam in a frying pan and cook peppers and onions over medium heat for about 5 mins
Add garlic and mushrooms to the pan and cook until soft
Crack and beat all 10 eggs in a large bowl or measuring cup.
Spray your muffin tins with Pam
Add veggies from your frying pan and the fresh basil to the egg mixture. Mix well
Pour the mixture into muffin tins.
Sprinkle the shredded cheese on top
Cook for 15-20 mins or until firm
